Protein in Pasta? And Gluten free?

Since I'm gluten sensitive, it's important for me to not eat traditional pasta like I use to. Over the years though, there have been many option out there. My most recent favorite kind is chickpea pasta by Banza (this is where I buy mine). If I cooked it for you, you would never know it wasn't traditional pasta. One of my favorite italian dishes to make is Rigatoni with Eggplant Puree~delizioso

I feel like I'm letting a secret out when I share this recipe because it is soooo good and has a ton of flavor. And I must admit that I get pleasure out of sneaking eggplant and tomatoes into my family's dish 😉 and they don't even know it. They think it is a tomato sauce I cooked (they'll eat tomato sauce but not tomatoes). I love when I trick them with food they really like. hahaha Don't judge. If you had picky eaters you would understand. 😂

I highly encourage you to try this recipe out. I didn't use the pine nuts and instead of using the mint leaves I used ONE drop of doTERRA peppermint essential oil. You might be thinking peppermint is odd in a pasta dish but it definitely works in this one. But ONLY USE 1 DROP of the essential oil. Believe it or not, more than that will overpower the dish. If you like spicy then use the 1 tsp of crushed red pepper that is recommended. If not then go with a 1/2 or 3/4 tsp of crushed red pepper.
